Y's Table Corporation (CEO: Mutsuo Funabiki, Head Office: Akasaka, Minato-ku, Tokyo), which operates "XEX" and the Italian restaurant "SALVATORE CUOMO," will grand open "OSTERIA SALVATORE Sapporo" on the first floor of the South Wing of Hotel Monterey Edelhof Sapporo on Tuesday, November 4, 2025.

Salvatore Cuomo won the World Pizza Championship for three consecutive years and is a pioneer in spreading authentic Neapolitan pizza culture in Japan. At OSTERIA SALVATORE Sapporo, we offer seasonal dishes in a homey atmosphere, focusing on wood-fired Neapolitan pizza and pasta that have inherited his techniques.
An "osteria" is a restaurant in Italy where people gather casually to enjoy wine and local cuisine. Inheriting this spirit of valuing the food culture rooted in the region and connections between people, we offer cuisine that combines the bounty of Hokkaido's land and sea with the techniques of Naples.


Hokkaido ingredients x Neapolitan techniques

At OSTERIA SALVATORE Sapporo, we use an abundance of local Hokkaido ingredients and prepare them with the skill of our artisans.

Pizza dough made with 100% Hokkaido produce . Made with water, flour, and salt from Hokkaido, this special dough is blended with spelt flour and baked to a fragrant finish.

Asahikawa "Takasago Beef"
The cattle are raised on feed made from sake lees from Takasago Sake Brewery. They serve dishes such as Neapolitan-style pesto.
*Neapolitan Genovese: In Naples, "Genovese" refers to a stew of onions and meat .

FATTORIA BIO Cheese <br /> Mozzarella, burrata, and ricotta cheeses made by Italian cheese maker Giovanni using milk from Hokkaido.

Other dishes include Caesar salad with homemade ham made from Shiretoko chicken, a brand of chicken bred in the vicinity of the Shiretoko Peninsula, clams raised in the cold waters of Akkeshi, and Hokkaido water octopus in pasta and carpaccio, allowing you to taste the flavors of the Hokkaido sea as they are.

We accept reservations for welcome and farewell parties, private parties, etc. according to the occasion and number of people.

For large groups and private parties, we can accommodate up to 70 people standing and 46 people seated. We also offer rentals for projectors, microphones, pianos, and more. We will prepare according to your wishes and budget, so please feel free to contact us to discuss the menu and quotes.
