A winemaker's dinner featuring Hōsui Winery will be held at Sapporo Excel Hotel Tokyu.

Sapporo Excel Hotel Tokyu (Sapporo, Hokkaido; General Manager: Tokuyuki Mizutani) will be holding a collaborative event with Takamizu Winery in Iwamizawa, Hokkaido, called "Maker's Dinner vol.2," for one day only on Friday, June 26, 2026. This project was launched in March 2026 with the desire to showcase the appeal of Hokkaido wines through food, as a hotel based in Hokkaido.

For the first event, we welcomed Domaine Raison, a winery in Nakafurano, as our guest, and offered a pairing of their carefully selected wines with Japanese cuisine. It was a special evening where guests enjoyed food and wine surrounded by winery staff, while being captivated by the stories behind the wines, and it was very well received.

For our second collaboration, we will be partnering with "Housui Winery" in Iwamizawa City. Iwamizawa is known as one of Hokkaido's leading heavy snowfall areas. The wines nurtured by its cool climate and abundant nature possess a refined taste while also exhibiting a warmth that reflects the winemaker's personality. These expressive wines, which reflect the terroir of this snowy region, are highly regarded both domestically and internationally. <*>

To allow you to more fully appreciate its charm, this event will feature special dishes designed to complement the wine. The producer, chef, and restaurant staff, including the sommelier, will collaborate directly, discussing and refining the menu from their respective perspectives to create a one-day-only special menu.

For one of the appetizers, "King Crab Wrapped in Paper," we paired it with "Yuki no Keifu Chardonnay." The rich fruitiness and pleasant acidity of the wine complement the acidity of the king crab and daikon radish marinated in sweet vinegar very well.

The seasonal grunt fish (Isaki) served grilled is sprayed with wine from Housui Winery to enhance its aroma and flavor. Even in simple cooking, a delicate touch is added with the harmony with the wine in mind. For pairing, we recommend "Yuki no Keifu Kerner." Its refreshing fruitiness reminiscent of lemon peel and yellow flowers, crisp acidity, and pleasant subtle bitterness harmonize to bring out the delicate flavor of the grunt fish.

Additionally, for our "Grilled Rice Ball Covered with Grilled Sardines," which boasts a deliciously savory char, we offer "Yuki no Keifu Lemberger" sake. Its flavor, reminiscent of red fruits, and spicy aroma pair perfectly with the rich sauce.

In addition, we will be offering a total of six dishes, including sashimi, fish dishes, meat dishes, and dessert, paired with seven different wines from Hōsui Winery. Enjoy an evening of fine wine and exquisite cuisine while listening to stories about the wines.

At our hotel, we aim to provide memorable moments for families through seasonal events and experiential programs, while also offering the comfortable hospitality and extraordinary experience that only a hotel can provide.
