  • What is Udon of Shikoku?

The first self-service udon restaurant in Sanuki, the home of udon

In 1966, the first store opened in Marugame City, Kagawa Prefecture under the name "Udon Specialty Store Shikoku". It has since expanded to other areas of the prefecture, including Osaka, and spread the authentic "Sanuki udon" throughout the country.

It was a pioneer of the udon noodle making method.

It was a "self-serve udon" that you put in hot water to heat and then eat.

Nowadays, it is common to find udon restaurants where you can pour your own soup.

But it was a novel idea at the time.

● As an "Udon Izakaya"

On July 7, 2000, the Nishi Umeda store opened, and changed from its previous udon specialty to serving authentic Sanuki udon for lunch and yakitori and handmade tofu as snacks to go with alcohol in the evening.

We have started developing "Udon Izakaya" with the preparation of authentic Sanuki udon.

The dashi is made from dried sardines from the Setouchi region, and the menu includes local ingredients.

It is sold using the unique menu descriptions (hot, chilled, and cold).

The business style is based on the concept of authentic Sanuki udon, such as Kamatama udon and raw soy sauce udon.

We have made some changes to the rule.

●Our commitment to udon

The udon is made after checking the weather for the day. The noodles have a unique chewy texture and flavor.

Our Shikoku udon noodles are made from a unique blend of wheat.

Because the food is simple, we are particular about the ingredients used.

●The key to the flavor of udon is the broth

The dried sardines are high quality and come from the Seto Inland Sea area. The high quality soy sauce is from Shodoshima. The salt is natural salt made from the seawater of the Seto Inland Sea. The soup stock is carefully made from these carefully selected ingredients.

●A style where you can complete your meal by eating and drinking

In the evening, you can enjoy a wide variety of dishes such as yakitori made with Daisen chicken and alcoholic beverages.

Then, you can finish off your meal with some udon noodles.

The style in which udon can be tied is also a distinctive feature of Shikoku udon.

  • About the group brand "Kabe no Ana"

In 1953, Takayasu Narimatsu, known as the "originator of Japanese-style spaghetti," opened "Hole in the wall" in Tamura-cho, Tokyo (now

Founded in Nishi-Shinbashi, the restaurant moved to Shibuya in 1963 and changed its name to "Kabe no Ana."

He came up with the idea of spaghetti with shiitake mushrooms, and started making Japanese-style spaghetti by adding kelp powder as a secret ingredient.

He came up with 200 different kinds of spaghetti, including "Tarako Spaghetti," which was inspired by caviar brought by a customer.

"Spaghetti" became a hit menu item, and the toppings we came up with were ingredients that rank highly in the spaghetti world.

And, on the occasion of the 70th anniversary of the company's founding last year, it was upgraded to "The Best Original Tarako Spaghetti".

We will continue to listen to our customers' opinions and work hard every day to develop menus that will please our customers.

I hope to work together with you as a menu producer.
