Locals are of course great fish lovers, so sushi chefs are required to improve their skills, and therefore, the level of sushi served in Hokkaido is quite high. Sushi places here offer dozens of different types of seafood throughout the year, including rare local fish such as Gokko (smooth lumpsucker) and Hakkaku that are not served anywhere else. They are also proud of rice and sushi vinegar they select, and some of them use only Hokkaido-grown rice. What comes into our mind when we think about sushi is the high price, but do not worry.
